Spicy warm fruit salad

This recipe is good for using up bits of fruit that are past their best and are not quite good enough for fresh fruit salad. Almost any fruit can be used such as mangoes, apricots, pineapple, peaches, nectarines, grapes, and kiwi fruits. Delicious served warm with vanilla ice cream or serve on top of your morning cereal.

Ingredients: serves 4


Method:

  1. Put the banana, apples, pears, plums, kiwis and any other fruit that needs using up in a heavy based sauce pan. Add the orange juice and spices.
  2. Cook over a low heat for about 8-10 minutes.
  3. Lightly stir in the grapes just before serving.
  4. Allow to cool slightly and serve warm with crème fraiche or ice cream.

Recipe tips:

This can also be cooked in the oven. Preheat the oven to 180°C / 350°F / Gas Mark 4. Put the fruit and spices in an ovenproof dish, cover with foil and bake in the oven for about 15-20 minutes or until the fruit is just soft and bubbling. Lightly stir in the grapes.
