Jacqueline O'Donnell

Jacqueline and Pauline O'Donnell are the sisters behind two very busy and popular Glasgow eateries.

They originally operated as; "Big Sis Cooks, Wee Sis Serves" however, with 8 strong years behind them, they have brought in a little help. Jacqueline, Pauline and their team have developed a homely welcoming local eatery called The Sisters
 

Plum duff

Jacqueline O'Donnell: Chef

Instead of throwing away any old bread and overripe plums you can use them for this recipe.

Ingredients: serves 4

  • 1kg ripe soft plums
  • 1 bulb of stem ginger (optional)
  • 6-8 slices of bread buttered
  • 2 eggs
  • 100ml double cream
  • 1 tbsp brown sugar
 
Method:

  1. Preheat the oven to at 180C/350F/Gas mark 4.
  2. Chop the ginger and stew with the plums for 5 - 10 minutes in a pan.
  3. Pour into a baking tray. Cut the bread into triangles and arrange the bread slices on top of the plums.
  4. Beat the eggs and the cream together then pour this mixture over the plums and bread.
  5. Sprinkle the sugar over the top. Bake in the oven for 15 - 20 minutes until puffed up and golden brown on top.
  6. Serve straight from the oven with some vanilla ice cream or custard.
