Herbed root vegetables

Ingredients: serves 2 - 4 as a side dish

Herb butter:
Method:

Vegetables:
  1. Put the olive oil and butter into a large pot over a medium-high heat.
  2. Add the vegetables and toss to coat them well with the fat; season with salt and pepper.
  3. Add 1 cup of water and bring to the boil.
  4. Lower the heat to a simmer, cover the pot, and cook until the vegetables are tender (about 20 minutes).

Herb butter:
  1. Meanwhile, make the Herb Butter by combining the soft butter and herbs together; season with some salt and pepper.

To serve:

Strain vegetables if necessary and serve with a small knob of herb butter melted on top.

Recipe tips:

Keeping your fresh vegetables in the fridge will help keep them fresher for longer. However, potatoes are best kept in a cool dark place.
