Lemon panna cotta

Ingredients: serves 4


Method:

  1. Soften gelatine in warm water.
  2. Mix lemon zest, juice and sugar together
  3. Bring milk and cream up to a simmer and then slowly add it (whisking) to the lemon mix.
  4. Take the gelatine out of the water and add to the milk and lemon. Let the liquid cool down to room temperature and then pour into cocktail glasses and leave to set in the fridge.
  5. You can garnish with crystallised lemon and mint.

Recipe tips:

Remember to keep your fridge between 1 - 5°C.
