Gratin of purple sprouting broccoli, parmesan & almonds

Ingredients: serves 2 - 4 as a side dish


Method:

  1. Cook the broccoli in boiling salted water until just done. Remove with a slotted spoon and set aside.
  2. Bring the cream to the boil with salt to taste and whisk in the egg yolks.
  3. Add the parmesan to the cream and whisk off the heat until the parmesan has melted completely.
  4. Sprinkle the flaked almonds over the top of the broccoli.
  5. Gratinate the broccoli under a hot grill until the surface turns a golden brown and the almonds are lightly toasted.
  6. Serve immediately.

Recipe tips:

Hard cheeses such as cheddar and parmesan can be frozen.
