Orange & almond cake

This is a gorgeous no-flour rich orange and almond cake and is great served as a dessert with crème fraîche. This cake is best enjoyed fresh on day of baking.

Ingredients: serves 4 - 6


Method:

  1. Oil a 23cm cake tin.
  2. Boil 3 oranges for an hour in a saucepan.
  3. Cool and slice crosswise and remove all seeds.
  4. Blend eggs, ground almonds, sugar and baking powder with the oranges in food processor.
  5. Pour into tin, and bake for 45 minutes till golden brown at 180°C / 350 °F / Gas Mark 4.

Recipe tips:

Fruit such as apples, oranges, melons, strawberries and grapes will stay fresher for longer if kept in the refrigerator.
