This is a delicious store cupboard/freezer recipe that makes a great starter. Spice paste in a sealed jar keeps in the fridge for a couple of months, but you could freeze it in portion sizes so easy to use when needed.
Ingredients: serves 1 - 2
30 ml oil
3 garlic cloves (chopped finely)
1 tbsp red curry paste
120 ml coconut milk
250 ml stock
1 tbsp sugar
1 tsp salt
1 tbsp lemon juice
4 tsp crunchy peanut butter
4 tbsp breadcrumbs
Method:
Heat the oil, add chopped garlic and fry till golden.
Add the curry paste and cook for a few seconds.
Add the coconut milk, then stock, sugar, salt and lemon juice. Cook for a few minutes.
Add peanut butter and breadcrumbs.
Serve with rice cakes.
