Rice cakes with spicy crunchy peanut sauce

This is a delicious store cupboard/freezer recipe that makes a great starter. Spice paste in a sealed jar keeps in the fridge for a couple of months, but you could freeze it in portion sizes so easy to use when needed.

Ingredients: serves 1 - 2


Method:

  1. Heat the oil, add chopped garlic and fry till golden.
  2. Add the curry paste and cook for a few seconds.
  3. Add the coconut milk, then stock, sugar, salt and lemon juice. Cook for a few minutes.
  4. Add peanut butter and breadcrumbs.
  5. Serve with rice cakes.
