Celebration chicken

Ingredients: serves 6


Method:

  1. Put honey and curry powder into a small saucepan, simmer for 5 minutes.
  2. Add chutney and wine, simmer for 5 minutes and leave to cool.
  3. Fold (lightly whipped) cream into mayonnaise, then add the curry sauce.
  4. Add chicken (cut into bite-sized pieces) and coat with the sauce, chill.

To serve:

Decorate with parsley and serve with a rice salad or baked potatoes.

Recipe tips:

Keep all meat and fish products in the fridge, unless you plan to freeze them.
