Cold chicken curry

Ingredients:


 
Method:

  1. Fry onion and apple until soft, then add the dried apricots and curry powder.
  2. Stir in the stock, tomato puree, lemon juice and apricot jam and leave to cool.
  3. Stir in the cream, mayonnaise and chicken (cut into bite-sized pieces).
  4. Season well and add 1 tbsp of pine nuts (if desired).

 
Serve:


Serve with rice.
