A simple ever so quick recipe that is really delicious and can use up lots of really ripe fruit. Allow about 3 or 4 plums per person. This recipe also works well if you have over-ripe apricots, apples or pears.
Ingredients: serves 4
700g or about 15 plums (over-ripe, washed, halved and stone removed)
1 tsp ground cinnamon
4 tbsp brown sugar
100 ml greek style natural yoghurt (or whipping cream flavoured with vanilla essence)
Method:
Preheat the oven to 190°C / 375°F / Gas Mark 5.
Place the plums on an ovenproof dish and sprinkle with the cinnamon and sugar.
Bake for 15-20 minutes or until the fruit is tender. Serve warm with Greek yoghurt or vanilla cream.
