Vegetable pie

Ingredients: serves 4


Method:

  1. Preheat the oven to 200°C / 400°F / Gas Mark 6.
  2. Make a white sauce by melting the butter in a saucepan and adding the flour and cayenne pepper. Next whisk in the milk, bring to the boil and allow to thicken.
  3. Place the leftover vegetables into an ovenproof dish and pour over the white sauce.
  4. Add the cheese to the mashed potato and mix well. Place this mixture on top of the vegetables and white sauce.
  5. Bake in the oven for 30 minutes.
