Winter vegetable casserole

Ingredients: Serves 2 as a main meal


 
Method:

  1. Preheat the oven to 350°F / 180°C / Gas Mark 4.
  2. Prepare the vegetables and chop into bite-sized pieces.
  3. Place the vegetables in to a casserole dish, along with the chopped tomatoes, herbs and water. Season well.
  4. Cover the casserole dish and bake in the oven for approx 1 hour.
