Tom Kitchin

Awarded one Michelin star in January 2007 for his restaurant, The Kitchin, Tom is the youngest ever Scottish Chef-proprietor to receive one!

The Kitchin was voted 'Restaurant of the year' 2007 by The List magazine and Tom himself was 'Scottish Chef of the Year' 2007.
 

Summer fruits gratin

Tom Kitchin: Chef

Ingredients:

  • 100g Perthshire raspberries
  • 100g Perthshire brambles
  • 100g Perthshire strawberries
  • 150ml warm water
  • 100g Perthshire blueberries
  • 300ml red fruit coulis
  • 3 egg yolks
  • 3tbsp white wine
  • 100g caster sugar
 
Method:

  1. Warm the fruits in the red berry coulis and transfer to a baking dish.
  2. Beat the egg yolks, white wine and sugar until thick and creamy.
  3. Pour over warmed fruits and grill until golden brown.

Serve:

Serve with vanilla ice cream.
