Pre heat oven 180°C / 350°F / Gas Mark 4.
In a generous sized mixing bowl, cream with butter and sugar togterh with a wooden spoon (or electric beater). Add eggs and continue to beat together until smooth.
Stir in dry ingredients and banana until thoroughly mixed through.
You can pour the batter into a greased and lined 1kg loaf tin but I prefer to make smaller buns in muffin cases as they cook more quickly and are fun to eat. A loaf will take approx 1.5 hours whereas the buns will take approx 25minutes. The buns are ready when the tops are set and golden and a skewer (or cocktail stick) inserted into the center comes out clean and not sticky with raw cake mix.
