Banana bread

Ingredients: serves 8 - 12


Method:

  1. Pre heat oven 180°C / 350°F / Gas Mark 4.
  2. In a generous sized mixing bowl, cream with butter and sugar togterh with a wooden spoon (or electric beater). Add eggs and continue to beat together until smooth.
  3. Stir in dry ingredients and banana until thoroughly mixed through.
  4. You can pour the batter into a greased and lined 1kg loaf tin but I prefer to make smaller buns in muffin cases as they cook more quickly and are fun to eat. A loaf will take approx 1.5 hours whereas the buns will take approx 25minutes. The buns are ready when the tops are set and golden and a skewer (or cocktail stick) inserted into the center comes out clean and not sticky with raw cake mix.

This recipe can be made as either into a loaf or you can make up to 12 muffins.
