BBQ'd skewers of Scottish salmon with a sweet and sour sauce

Ingredients: serves 4

Method:

Sweet and Sour Sauce:
  1. Place salmon in a bowl with one tablespoon of oil and black pepper to marinade whilst making sauce.
  2. To make sauce, sauté onion in remaining oil. Add vinegar, stock, mustard, sugar, salt and pepper and simmer to reduce for 10 minutes.
  3. Meanwhile, stir in remaining ingredients to sauce and simmer to reduce for a further 5mins.

Salmon Skewers:
  1. Pre-heat grill / BBQ and thread salmon onto wooden skewers.
  2. Season with sea salt and grill on a high heat for 3-4 minutes, turning once

To serve:

Serve with boiled rice.
