My favourite burger with cheese melt

Wendy Barrie: Food writer

Ingredients: serves 2

Method:

  1. Heat oil in pan and cook onion over a medium heat until soft and only lightly golden. Add all the seasonings and cook for a further couple of minutes. Remove from heat and cool.
  2. In a bowl, using a fork, mix the minced meat with seasoned onion.
  3. Using clean hands - a little plain flour helps to prevent sticking - shape the mixture into 2 burgers.
  4. Pre heat frying pan (or a BBQ) and dry fry over a medium heat for 5 minutes per side (if meat is very lean you may need to add a drizzle of oil to pan but usually a little fat comes out of the meat). They may need a little longer depending on the thickness of your burgers. Test the centre to ensure there is no pink meat before eating.

To serve:

To serve, place a roll on each plate, add leaves if wished, then burger and top with cheese (see note) and lid. Eat immediately.

Recipe tips:

You can use leftover grated cheese/ or grate very hard cheese/ or use a cheese slice/ or blue cheese will also melt beautifully over the hot burger.
