Vegetable soup

This recipe would work equally well for other leftover root vegetables such as parsnips.

Ingredients: serves 4


Method:

  1. Place oil in a large pan over a medium heat. Sauté the onion for a couple of minutes then add the other vegetables. Stir together.
  2. Add stock. Place lid on pan and simmer for approx 15 minutes until all the vegetables are soft.
  3. For a smooth soup put in a blender or through a sieve, otherwise leave the soup chunky.

To serve:

Serve with wholemeal bread.
