Pre heat oven 220°C / 425°F / Gas Mark 7.
In a bowl, rub the butter into the flour using your fingertips untill it resembles breadcrumbs. Stir in sugar and fruit.
Make a well in the dry mix and add egg with a spoonfull of milk. Using a table knife, work together to form a soft dough adding the rest of the milk gradually. The mix should be neither too dry nor too sticky but soft and easy to handle.
Turn onto a floured surface, knead together lightly and form a circle.
There is no need for a rolling pin - just press lightly to make a circle approx 1.5 - 2cm deep and cut into 6 wedges. This is quicker, easier and less wasteful than cutting out circles. They also look deliciously homemade!
Brush with any remaining milk to glaze - if you wish to make them shiny.
Bake for 8 to 10 minutes until well risen and set.
