Fruity layered dessert

Wendy Barrie: Food writer

This recipe will work with a variety or mixture of different fruits.

Ingredients: serves 1

Method:

  1. If using cream, whip lightly until it can hold its shape.
  2. Pick a large glass or tumbler and fill with a third of your fruit. Add half the crumbs then a dollop of cream. Repeat.
  3. Finally spoon on remaining fruit, (like jewels) with a neat spread of cream on top and scatter with the dark sugar. If you set your dessert aside, even for a few moments, the sugar will dissolve into a runny toffee for an attractive and tasty topping - the darker the sugar the better it works.

To serve:

Serve in a large glass or tumbler
