Herring in oatmeal with black pepper & lime

Ingredients: serves 2


Method:

  1. Pre-heat pan with a light smear of oil.
  2. Place oatmeal with pepper on a plate and press onto both sides of each fillet.
  3. Pan fry for 2 minutes per side. The fish is cooked when it flakes easily with a fork.
  4. Serve immediately with freshly squeezed wedge of lime.
