Scottish lamb with pesto & linguine

Ingredients: serves 4


Method:

  1. Heat oil and sauté onion in a heavy based pan. Add lamb to pan and seal until brown - better done in a couple of batches if the pan is a little crowded.
  2. Add remaining ingredients - apart from pasta - and simmer with lid on pan over a medium heat for 45 minutes stirring occasionally to check there is enough liquid, adding a little water only if necessary.
  3. For the last 10 minutes of cooking, cook pasta according to the instructions on the packet.
  4. Drain pasta and serve with lamb on heated plates.
