Ingredients: serves 4

Lasagne:
  1. Pre-heat oven 180°C / 350°F / Gas Mark 4.
  2. In a pan, brown mince then add garlic and onion. Continue cooking to soften onion.
  3. Add tomatoes, seasoning and simmer.
  4. Prepare vegetables by washing, peeling and slicing finely.

Lasagne sauce:
  1. Meanwhile make sauce by whisking the cornflour, milk, cheese, pepper and nutmeg in a pan with a balloon whisk until simmering and thickened. Continue cooking and stirring for a couple of minutes. Set aside.
  2. In an oven ware dish, cover base with thin layer of meat sauce, a layer of sliced mixed roots, drizzle with one third of sauce and add a single layer of lasagne, breaking sheets as necessary.
  3. Repeat process then finish with final sauce and grated cheese.
  4. Bake for 45 minutes until bubbling.

Recipe tips:

Frozen raw meat and fish can be defrosted, cooked thoroughly, and frozen again. However, foods can never be reheated more than once.
