'Laxpudding' salmon pie

Ingredients: serves 2 - 3


Method:

  1. Peel and boil potatoes. Cut into slices once cooked and cooled a little. Divide into 3 portions.
  2. Peel and slice onion. Sauté lightly in the rapeseed oil. Do not brown.
  3. Grease an ovenware dish.
  4. Cover base with potato then add a layer of onions, salmon and dill.
  5. Repeat and finish with a layer of potato.
  6. Whisk together remaining ingredients and pour over salmon.
  7. Bake for 30-40 minutes until the mixture feels firm.

To serve:

Traditionally served with melted butter, a wedge of lemon is a healthier alternative!
