Lemon and garlic chicken

Ingredients: serves 4


Method:

  1. Coat chicken in flour seasoned with pepper. (The easiest way is to toss them together in a small freezer/sandwich bag).
  2. Heat oil and sauté onion and garlic in a pan over a medium heat. Add chicken and brown.
  3. Meanwhile cook rice in a pan of boiling water according to the time stated on the packet. (White rice takes 12 minutes whereas brown rice will take a little longer but is very tasty).
  4. Add leek and herbs to chicken. Stir.
  5. Cut four slices from the lemon and add to pan. Squeeze the juice from the remainder of the lemon into pan.
  6. Continue cooking over a medium heat, with lid on, for 15 minutes. Add a little water if necessary.

To serve:

Serve the chicken on a bed of rice, topped with a slice of lemon.
