Mediterranean pork casserole

Ingredients: serves 4


Method:

  1. Pre heat oven 180°C / 350°F / Gas Mark 4.
  2. Brown pork with onions in oil in a heavy casserole dish.
  3. Add remaining ingredients and cook in oven for 1hr.
  4. Finish with cornflour blended in half a cup of water near end of cooking if thickening required.

To serve:

Serve with boiled rice.

Recipe tips:

Try to eat leftovers within two days. The only exception to this is cooked rice, which should be eaten within one day.
