Pepper pestos

Ingredients: serves 2


Method:

  1. Brush pepper halves with oil and season. Place cut side down on BBQ /grill and cook for 3 to 5 minutes.
  2. Turn over and place a couple of teaspoons of pesto in each "shell."
  3. Cook for a further 5 minutes to roast skins and melt pesto. Finish with grated cheese.

To serve:

Serves with garlic bread & salad.

Recipe tips:

Also works exceedingly well with large open mushrooms.
