Potato wedges with tomato dip

Ingredients: serves 4

Method:

Potato Wedges:
  1. Pre-heat oven 180°C / 350°F / Gas Mark 4.
  2. Scrub potatoes and cut into wedges.
  3. Place on an oiled baking tray and cook for 10 minutes until skin toasted and inside soft.
  4. Serve wedges with dipping sauce and yoghurt.

Tomato Sauce:
  1. To make dipping sauce, sauté onion and garlic in oil, add remaining ingredients and simmer for 5 minutes.

Recipe tips:

Potatoes are best kept in a cool dark place - light and heat will cause them to go green and sprout.
