Heat 1 spoonful of oil in frying pan and sauté onions to colour lightly. Add bacon to fry crispy. Remove from pan.
Squeeze potatoes between layers of paper towels to remove some of the starchy liquid. Place in a bowl and mix through onions, bacon and seasoning.
Heat remaining oil in pan and add the mix. It can either be flattened into one giant pancake or in small individual portions.
Cook over a medium heat until the potatoes are golden and gently turn over. [If you are cooking a large one it is easier to slip it onto a plate, turn over using a second plate, then slip back onto pan]. Gently cook for a further 8-10 minutes over a medium heat to fully cook the potatoes, taking care not to burn.
