Ingredients: serves 1
2 or 3 spring onions (chopped)
1 tbsp fresh herbs (chopped)
1 piece of green pepper (chopped)
2 chopped tomatoes
¼ cucumber (chopped)
1 avocado (peeled and diced)
lemon juice
1 freshly ground pepper
Method:
Place all the ingredients in a bowl and mix together thoroughly.
To serve: Perfect for inside a baked potato or inside a wrap. Or serve with meats too.
